Green Monster Blender Muffins
Nov 04, 2026
Breakfast or snack ยท Makes 12 mini muffins ยท 10 minutes to mix, 15 minutes to bake
These are the muffins I want every family to have in the freezer.
One blender. One tray. No fuss.
And yes, they're green. That's the fun bit! In our house they're "monster muffins". Some families call them dinosaur muffins. Your child gets to name them, and suddenly they're very interested in eating them, ha ha.
You Will Need
- 1 big handful of fresh baby spinach (about 30 g)
- 1 large ripe banana
- 1 egg
- 120 g plain full-fat yoghurt (Greek or laban-style both work)
- 2 tablespoons olive oil or melted butter
- 100 g rolled oats
- 1 teaspoon baking powder
- 1โ2 teaspoon cinnamon
- 2 soft Medjool dates, stones out (optional, for a little sweetness)
Let's Make It
- Heat the oven to 180ยฐC (160ยฐC fan) and grease a 12-hole mini muffin tray, or line it with paper cases.
- Put everything into the blender. Spinach first, then the wet things, then the oats and baking powder on top.
- Blend until smooth and bright green. About 1 minute.
- Pour the mix into the tray, about three quarters full.
- Bake for 12 to 15 minutes, until they spring back when you press the top.
- Leave them to cool in the tray for 5 minutes, then on a rack.
Keep them: 3 days in a sealed box in the fridge, or 2 months in the freezer. Defrost overnight or warm for 15 seconds in the microwave.
Little Hands Can Help ๐
- Tear the spinach leaves and drop them into the blender.
- Peel the banana (and maybe eat a little piece ha ha).
- Press the blender button with you, hand on hand.
- Spoon the mix into the cases. Messy is fine. Messy is learning.
Safety Note for Under-3s โ ๏ธ
- These are soft and easy to manage, but always sit your child down to eat, and stay close.
- For babies starting solids, cut a muffin into strips or squash a little between your fingers to check it's soft.
- Leave the dates out for babies under 1 and offer the banana sweetness only.
- Contains egg, dairy and oats (check oats are gluten-free if you need them to be). If your child has a known allergy, please check with your doctor first.
