Rainbow Frozen Yoghurt Bark

Sweet treat or snack ยท Makes about 12 pieces ยท 10 minutes, plus 3 hours freezing

This is one of my favourite things to make with little ones.

It's a treat. It's colourful. It's cold (hello, UAE weather!). And your child does the decorating, so it's an art project too.

No food is "good" or "bad" in our house. A treat can sit happily alongside a meal or a snack. This one just happens to be full of yoghurt and fruit.

You Will Need

  • 400 g thick plain yoghurt (Greek-style works best)
  • 2 tablespoons smooth peanut butter, almond butter or tahini (optional)
  • 1 to 2 soft dates, mashed to a paste with a splash of warm water (optional)
  • 150 g mixed berries: blueberries, raspberries, chopped strawberries
  • A few kiwi or mango pieces for colour
  • 1 tablespoon chocolate chips or grated dark chocolate, for older children (optional)

Let's Make It

  1. Line a baking tray (about 20 x 30 cm) with baking paper.
  2. Stir the date paste into the yoghurt, if using, and spread it out on the tray about 1 cm thick.
  3. Drop little blobs of nut butter or tahini over the top and swirl with a skewer to make a marble pattern.
  4. Now the fun part. Scatter the fruit (and chocolate, if using) all over.
  5. Freeze for at least 3 hours, until firm.
  6. Snap or cut into pieces and serve straight from the freezer.

Keep it: in a sealed box in the freezer for up to 1 month. It melts fast, so serve on a plate.

Little Hands Can Help ๐Ÿ™Œ

  • Spread the yoghurt with the back of a big spoon.
  • Do the marble swirl with a chopstick.
  • Decorate! A rainbow, a face, a "pattern". Name the colours as they go.
  • Break the bark into pieces once it's frozen. Very satisfying!

Safety Note for Under-3s โš ๏ธ

  • Cut blueberries in half or squash them, and chop all fruit small. Never use whole nuts.
  • Frozen pieces can be hard. For under-2s, let a piece soften for a few minutes, or cut it into thin strips.
  • Skip the chocolate chips for under-3s. For under-1s, leave out the dates as well and let the fruit do the sweetening.
  • Nut butters and tahini are common allergens. Only use them once your child has had them safely, and spread them thinly.
