Breakfast ยท Makes 16 squares ยท 10 minutes to mix, 18 minutes to bake
Standing at the hob flipping pancakes one by one while a toddler hangs off your leg?
No thank you.
This is the lazy way, and I love it. Everything goes in one tray, into the oven, and out come 16 soft squares. Eat some today and freeze the rest for school-run mornings.
You Will Need
- 2 ripe bananas
- 2 eggs
- 250 ml milk
- 200 g plain flour (or half plain, half wholemeal)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 2 tablespoons melted butter, plus a little for the tray
- 1 tablespoon cocoa powder (optional, for a chocolatey version)
- A handful of blueberries or chopped strawberries to scatter on top
Let's Make It
- Heat the oven to 200ยฐC (180ยฐC fan). Line a roughly 23 x 33 cm baking tray with baking paper and brush it with butter.
- Mash the bananas in a big bowl until smooth.
- Whisk in the eggs, milk and melted butter.
- Add the flour, baking powder, cinnamon and cocoa (if using). Stir gently until just mixed. A few lumps are fine.
- Pour into the tray and spread it into the corners.
- Scatter the fruit on top.
- Bake for 15 to 18 minutes, until golden and springy in the middle.
- Cool a little, then cut into 16 squares.
Serve with: a spoon of yoghurt, a little nut butter, or a boiled egg on the side.
Keep them: 3 days in the fridge or 2 months in the freezer. Pop a square in the toaster to warm it.
Little Hands Can Help ๐
- Mash the bananas with a fork or potato masher. Toddlers LOVE this job.
- Crack the eggs into a separate small bowl first (fishing out bits of shell together is fine).
- Scatter the berries on top. Let them make patterns or a smiley face.
Safety Note for Under-3s โ ๏ธ
- Cut blueberries in half, or squash them flat, for under-3s. Whole round berries can be a choking risk.
- For babies, cut the squares into finger-sized strips they can hold.
- Contains egg, dairy and wheat. If your child has a known allergy, check with your doctor first.
